Sophia’s delicious date & coffee balls recipe

Sophias date and coffee ball recipe

Makes about 20

Ingredients

6 cardamom pods
115 g salted butter, cubed

100 g sugar

2 tsp instant coffee granules

250 g dates, pips removed and chopped

200 g Marie biscuits, broken into small pieces

5 ml orange blossom water
100 g diced almonds, dry roasted and cooled

Method

Remove the seeds from the cardamom pods and toast in a dry pan. They puff up slightly.

Remove from the heat and allow to cool.

When they have cooled, place them in a mortar and pestle and grind to a powder.

Place the butter and sugar in a pot and warm over a low heat until the sugar has dissolved.

Add the coffee granules and stir until dissolved.

Now add the dates and cook until the dates have disintegrated, stirring occasionally.

Add the biscuits, orange blossom water and the cardamom and mix well.

Using a tablespoon measure for size, form balls and roll those in the diced almonds. Repeat to finish the mixture.

Store in an airtight container.
